I also love almonds, but chocolate and almonds is truly a heavenly match. Have you tried the Cocoa-Dusted Almonds from Trader Joe’s? Um, well, they are AMAZING! I had a slight addiction to them, and found myself polishing off the entire bag in a day! Oops.

I decided since I was going to single-handedly put Trader Joe’s Cocoa Almonds out of stock, I decided to make my very own. It would also save me some trips to the store to stock up on these addictive chocolatey nuts.

Almonds are a great source of energy, and they are of my favorite snacks. I always have a stash of almonds hanging around the house, and grab a handful when I am feeling hungry or need a bump of energy. But plain ole’ almonds can get a little boring.

If you are in an almond snacking slump you must try this recipe. It adds a little dash of sweetness and burst of chocolatey goodness. You will be impressed!

You can whip these babies up in under 10 minutes, and it only takes 3 ingredients. That’s it!

Hot Chocolate Dusted Almonds

These addictive sweet and chocolate roasted almonds will be your new favorite snack.

  • 1 cup raw almonds
  • 1/4 cup agave
  • 1 package hot chocolate mix (or cocoa power)
  • 1 tablespoon cocoa powder (optional- to make them extra chocolatey)
  1. Preheat oven to 350 degree F.

  2. Toss the almonds into a bowl and mix in the agave. Stop to coat all the almonds evenly.

  3. Transfer the coated almonds to a parchment-lined cookie sheet and spread them out.

  4. Last them in the oven at 350 degrees F for about 8 minutes. Check them every few minutes to make sure they do not burn.

  5. Remove the almonds, and transfer them back to the bowl. While they are hot mix in the hot chocolate powder and cocoa (or just cocoa). Stir to ensure they are all coated evenly.

  6. You can leave them in the bowl to cool (some may stick together), or spread them back out on the parchment to cool.

  7. Wait a few minutes, them snack away!

Come on, you can’t look at this picture and tell me you do want it, right!? There is some special magic in a picture of melted dark chocolate that makes my heart start racing, and my mouth salivate. I just ate a piece of this S’mores Galette, and now that I am writing this post and looking at these pictures I am certainly ready for another heaping slice!

The golden toasted marshmallows have that wonderful crispy crust, and the graham crust is the perfect compliment to the molten marshmallow chocolate center! This beautiful galette only took me 15 minutes to prepare, a quick chill, then off in the oven it went.

So simple.

Cricket has been spending so much of her time in the kitchen lately, and today was no exception. She stared at me longingly with those big brown soulful eyes and followed me with her gaze as I bounced around the kitchen from the pantry to the oven. I so badly wanted to share my exceptional creation with her, but she’s a dog and can’t do chocolate, so that means more for me and none for her. Sorry Cricket!

Really she is in the kitchen when I am cooking and when even I am not! I think she is expecting that I will return at any minute to start my next creation, and she may be wishing it is going to be a doggie dish for her. Yes, it’s true, I haven’t created any doggie dishes lately for the blog. Sorry Cricket (and my other doggie fans!). I will soon, I promise!

So getting back to that S’mores Galette. I know you haven’t stopped dreaming about it! Do not be intimidated by its fanciness, because it’s actually very easy to make. The dough comes together in 5 minutes, and is quite a breeze if you use your food processor. It should look something like this:

Next, wrap it up in parchment and set it in the freezer for 15 minutes. This greatly speeds up the chilling process which, in the refrigerator, can take hours!

Roll the dough out between two sheet of parchment paper, then fill it with the chocolate and marshmallows, fold up the sides and pop it in the oven. You are almost there!

When it’s ready the marshmallows and crisp should be a rich golden brown.

Let it cool for 10 minutes then serve it up and ENJOY!

S’Mores Galette

This richly indulgent S’mores Galette is stuffed with ooey gooey melted dark chocolate and fluffy toasted marshmallows! It is so simple to make, but so extravagant. It is sure to wow your dinner guests. They will never guess it’s gluten free, grain free, and paleo!

  • 2 cups almond flour
  • 1/4 cup arrowroot flour (tapioca should work in place of arrowroot if needed)
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt (Himalayan or sea salt)
  • 6 tablespoons grass-fed butter
  • 1 egg (cold)
  • 1 cup dark chocolate chips (Enjoy Life brand)
  • 1 cup marshmallows (Dandies brand or paleo marshmallow recipe HERE)
  • Optional Egg Wash: 1 egg yolk plus slapping of water
  1. Preheat the oven to 350 degrees F.
  2. Add the almond flour, arrowroot flour, coconut sugar, salt and cinnamon to the food processor and mix on a low setting to combine.
  3. Add the butter 1 tablespoon at a time on a low setting, then add the egg.
  4. Once dough is formed, remove it from the food processor and place it on a piece of parchment paper. Flatten the dough down to about 1/2″ thick and cover with another piece of parchment paper on top and place it in the freezer for 15 minutes.
  5. After 15 minutes remove the dough from the freezer. Use a rolling pin to roll it out keeping the parchment paper not the top and bottom, until its about 1/4″ thick.
  6. Remove the top parchment and place the dough with the bottom piece of parchment on a cookie sheet or cast iron skillet.
  7. Fill the crust with the chocolate chips and marshmallows then fold up the sides to hold the filling in.
  8. Place on a lower rack in the oven for about 30 minutes, then move to a higher rack for 5-10 minutes to get a nice golden color on the marshmallows and crust.
  9. Remove and let cool for 10 minutes, then Enjoy!

Carmela’s is simply amazing. Their shop is simple, elegant and delicate. All organic, their ice creams are made in house with special care and attention. They have unique seasonal flavors, two of my fav’s being lavender honey and brown sugar vanilla bean- yum!

With all this ice cream eating going on I was feeling a bit guilty and sluggish thanks to extra sugar load, and I knew I had to clean up my act, so I made this: Banana Chocolate Cream Ice Cream Cake, and it’s delicious and SUPER HEALTHY. I can have a slice or two, and it’s guilt free. Best of all my little one loves it too!

(dairy-free, paleo, vegan, gluten and grain-free)This ice cream cake is super easy to make and contains only 3 simple ingredients: Coconut milk, chocolate chips (dairy free), and bananas- that’s it! Make sure to use a high speed blender (like a Vitamix) to blend the coconut milk and bananas on high. This will aerate the “ice cream” and keep it smooth and creamy as it freezes!

3 Ingredient Banana Chocolate Cream Ice Cream Cake

This rich and creamy Chocolate and Banana Cream Ice Cream Cake is made in the blender with only 3 simple ingredients! No way? Yes way! You can whip this up in no time. It looks super fancy, and best of all it’s healthy! (dairy-free, paleo, vegan, gluten and grain-free)

  • 3 ripe bananas
  • 2 cans coconut cream can of full fat coconut milk. I would recommend using 2 cans of coconut milk to replace 1 can of coconut cream) (you can find this at Trader Joes OR use only the cream from a (chilled)
  • 1 cup chocolate chips (I used dairy-free Enjoy Life brand)
  1. Combine 1 can of coconut cream and 3 bananas in a high speed blender and blend on high for 2-3 minutes until the mixture is frothy and smooth.
  2. On the stovetop heat the contents of the other can of coconut cream in a small saucepan.
  3. Add the chocolate chips into the saucepan, and mix vigorously until you get a smooth chocolate sauce, then remove from heat and let cool.
  4. Meanwhile grease a 6″ round cake pan (a spring-form pan would be best for easiest removal!) with coconut oil.
  5. Pour in 1/2 cup of the banana mixture, then 1/4 cup of the chocolate mixture, then 1/2 cup of the banana mixture, then 1/2 cup of the chocolate mixture, then another 1/2 cup of the banana mixture, followed by 1/4 cup of chocolate mixture, and finally add the reaming banana mixture to top it off. (If you want absolutely perfect layers freeze each layer for 10 minutes before adding the next.)
  6. Set aside the left over chocolate mixture. You can store it in the fridge and reheat later.
  7. Freeze the cake for 2+ hours.
  8. When you are ready to serve the cake fill a large bowl with hot water.
  9. Remove the cake from the freezer and dip the bottom and sides of the pan into the hot water for a few seconds. Then, if the ice cream cake isn’t free, glide a butter knife around the edges to dislodge it, and place it on a serving plate.
  10. If its melting too quickly, place it back into the freezer to set, and heat the left over chocolate sauce over low-medium heat.
  11. Pour the remaining chocolate sauce over top of the ice cream cake.
  12. You can dunk a knife it hot water to aid in cutting the cake, and it may be easier to let it thaw 5-10 minutes if it’s too frozen to cut.
  13. Enjoy!

I mean, what is it about chocolate that makes it SO GOOD, and SO ADDICTIVE!? Really!? I always loved Mounds candy bars when I was a little girl, and now I can recreate that amazing flavor combination without having to leave my kitchen. Even better, the ingredients used to make THESE Coconut Cream Cups are healthy, all-natural, and good for you! Hip-hip Hoorah!

Chocolate Coconut Cream Cups

These creamy, rich, and chocolatey Coconut Cream Cups are the ultimate decandent (and secretly healthy!!) treat. Pop one of these into your mouth and the rich chocolate melts away to reveal silky, smooth, snowy, and sweet coconut cream. They are easy-peasy to make, and be sure to make extra, for they won’t last long!

  • 1 1/4 cups dark chocolate chips (I used Enjoy Life brand
  • 2 tablespoons coconut oil
  • 1/2 cup shredded coconut
  • 1 tablespoon maple syrup
  • 1/4 cup coconut butter
  1. Melt the chocolate chips plus 1 tablespoon of coconut oil in a saucepan over low heat.
  2. Grease the mini muffin tin with a little bit of coconut oil.
  3. Pour a teaspoon of melted chocolate into each compartment. Chill in the fridge or freezer for 10 minutes.
  4. Melt the coconut butter, maple syrup, and 1 tablespoon coconut oil in a saucepan over low heat.
  5. Once melted mix in the shredded coconut, and remove from heat.
  6. Spoon a heaping teaspoon of coconut cream mixture into each compartment (on top of the chilled chocolate layer).
  7. Spoon the remaining chocolate on top of the coconut cream layer and chill in the fridge until set, about 1/2 hour in the fridge or 10-15 minutes in the freezer.
  8. Carefully pop the cups out of the tray using a fork or butter knife.

Cricket and I have been logging a lot of miles lately. She loves to run every morning and by 7 am she is waiting by the door next to her leash. In fact, Cricket knows her daily schedule better than I do, and if I am late she is sure to let me know about it… lol. Breakfast is at 6:30 sharp (even on Sundays) and everyday she not-so-patiently stands by her metal bowl and paws at it to make loud dinging noises so the whole house can hear. After breakfast we get dressed, lace up the sneakers, pop the baby in the stroller and off we go! Now that Cricket is 11 years young, she still isn’t showing any signs of her age, with the exception of some grey hairs. She still is fast and spry, can out run me on her worst day, and would still have energy at the end of the day to do it all again! I hope I feel and look as good as she does when I am her age! She definitely has good genes, which helps, but I also know that a healthy diet and exercise also help to keep her youthful and in great shape. Often I feed her better than I feed myself. Her only junk food is the occasional In-and-Out burger patty, which she adores! I, on the other hand, have a weakness for treats, especially ice cream and chocolate!

With all the running we have been doing my need for sweets has hit an all time high so I needed to find a healthy, but still really indulgent, alternative.

Enter- Chocolate and PB smothered Banana Pops! They have the perfect combinations of rich dark chocolate and creamy peanut butter (you could also use almond butter), and the frozen banana pop is creamy and sweet, reminiscent of ice cream. They look good, right!?

Chocolate Peanut Butter Covered Banana Pops

  • 3 bananas
  • 1/3 cup chocolcate chips (I used Enjoy Life brand)
  • 1/3 cup peanut butter (or almond butter for paleo)
  • 2-4 tablespoons coconut oil
  • 6 popsicle sticks or straws
  • optional: 1/4 cup shredded coconut
  1. Cut your bananas in half and insert your popsicle stick into the cut end.
  2. Place the banana pops on a parchment-lines cookie sheet and place them in the freezer for at least 30 minutes.
  3. After the pops are chilled, heat the 1/3 cup of peanut butter and 1 tablespoon of coconut oil over low-medium heat until melted and combined. If the peanut butter dip is too thick add an additional tablespoon of coconut oil.
  4. Take the pops out of the freezer and deep each one into the peanut butter dip.
  5. Place them back onto the parchment-lined cookie sheet and pop them back into the freezer for a few minutes.
  6. Meanwhile, melt the 1/3 cup chocolate chips and 1 tablespoon of coconut oil over low-medium heat until melted and smooth. Add an additional tablespoon of coconut oil if needed to make the chocolate dip thinner.
  7. Remove the peanut butter covered pops from the freezer and dip each one into the chocolate and place back onto the cookie sheet.
  8. Sprinkle with shredded coconut if you’d like.
  9. Freeze for another 10 minutes, or until set, or until you want to eat them!

So this week I set out to make a cookie that called for coconut oil as opposed to butter or palm shortening. I am in love with the health benefits of coconut oil. Chocolate Chip Cookie “Energy” Cups

  • 1 cup almond flour (I recommend Wellbee’s)
  • 2 tablespoons tapioca starch
  • 1 tablespoon coconut sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea or Himalayan salt
  • 3 tablespoons coconut oil (melted)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla
  • 1/4 cup dark chocolate chips (Enjoy Life brand)
  1. Preheat oven to 350 degrees F.
  2. In a bowl combine and mix all the dry ingredients.
  3. Add the wet ingredients and mix to form a dough
  4. Add the chocolate chips and mix.
  5. Scoop about 1 tablespoon of dough into each mini muffin/cupcake tin compartment and press the dough down to compact it. (you also can use a regular muffin tin, but use 2 tablespoons of dough.)
  6. Bake at 350 degrees F for 6-7 minutes.
  7. Remove, let cool, then enjoy. (remove them from the tin by carefully dislodging them with a knife.)

When I was young my mom used to make my sisters and I Easter Bonnets. Now, these weren’t just any Easter bonnets, no no… They were huge wide brimmed straw hats that appeared they had been swallowed by a bouquet of silk flowers. Huge. Colorful. Silk. Flowers. EVERYWHERE. Complete with pink ribbons tied in a big bow under our chins. We looked adorable until we passed the age of 5 and then adorable became un-cool and we would no longer stand for it. You know I love to dress my beloved pup, Cricket, up for all the holidays, and sometimes I do it for no reason at all. Well, I made her the official Easter Bunny this year, with EXTRA big ears. Peanut Butter Speckled Eggs with Coconut Nests

Easter is almost here, but do not fear, you can make your own {healthy} candy this year! These Peanut Butter Speckled Eggs are cute and delicious and they even come with their own edible coconut nest. Everyone can partake in Easter candy indulging because they are gluten and grain-free, dairy-free, paleo, vegan, and refined sugar-free.

SPECKLED EGGS:

  • 1/2 cup of natural peanut butter (or cashew butter or almond butter)
  • 2 tablespoons cane sugar (coconut sugar will work too)
  • 2-4 tablespoons of almond flour or coconut flour (if using coconut flour use less)
  • 1/3 cup chocolate chips (Enjoy Life brand)
  • Optional: sprinkles

COCONUT NESTS:

  • 3/4 cup unsweetened coconut flakes (I used the large chunky flakes, but regular-sized flakes are fine)
  • 2/3 cup coconut butter
  • 1 1/2 tablespoons of cane sugar (can use coconut sugar but nests will not be as white in color)
  1. To Make the Eggs:
  2. Blend the sugar in a high speed blender for a few seconds to make a fine powder.
  3. Mix the powdered sugar with the peanut butter.
  4. If your peanut butter or nut butter is very sticky and wet add a tablespoon of almond flour or coconut flour so you can form an egg shape with the dough.
  5. If you make 1 tablespoon-sized eggs you will yield 8-10 eggs.
  6. Place them on a parchment-lined plate and then freeze them for one hour.
  7. Melt the chocolate chips over low heat in a small saucepan.
  8. Remove the peanut butter eggs from the freezer and use a spoon to dip them into the melted chocolate, give them a roll to coat, and place them back on the parchment-lined plate and cover with sprinkles.
  9. Place in the fridge or freezer until you are ready to enjoy them!
  10. To Make the Nests:
  11. Melt the coconut butter over low heat in a small saucepan.
  12. Blend the sugar to make a fine powder.
  13. Combine the coconut butter with the coconut flakes and sugar and mix well.
  14. Chill the mixture for about 10-15 minutes in the freezer to allow the coconut butter to solidify somewhat.
  15. Place a small square of parchment paper into 4 small bowls/ramekins.
  16. Press the chilled coconut mixture into each bowl (with the parchment paper between the coconut and the bowl). Use your fingers to firmly compress the coconut mixture into the bowl to make a nest shape.
  17. Freeze the nests for about 1 hour, then remove them from the bowls and store in fridge or freezer until you serve them.
  18. *Note: if you coconut mixture is not sticking together well just add more coconut butter. This is the “glue” that holds it together.

These gooey, chocolatey treats are also easy to whip up, and made in bar form for convenience. There is no need for the saucer-shaped cookie with the middle cut-out…. Why do they cut out the middle of the Somoas anyway!? No middles cut out here and you can cut them as BIG as you want:)

These Somoa Gooey Bars are loaded with extra gooey caramel, toasted coconut, and dark chocolate, layered on a crumbly shortbread.   • 1 cup unsweetened coconut shreds (toasted)
  • 1 ¼ cup coconut flour (you can sub almond flour but then reduce the amount of coconut oil]
  • 1/4 cup + coconut oil
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla
  • ¼ teaspoon salt
  • ¾ cup coconut milk/cream (one can of full fat coconut milk, cream only, save liquid for another use)
  • ½ cup coconut sugar
  • 2 tablespoons maple syrup
  • ½ cup chocolate chips (Enjoy Life brand)
  1. Preheat oven to 350 degrees F.
  2. In a pan over medium heat, toast the coconut shreds, moving them around the pan to ensure they are evenly golden, then set aside.
  3. Next in a bowl combine the coconut flour, salt, coconut oil, maple syrup and vanilla and mix well until you can form a ball of dough with your hands. Add more coconut oil if needed. Dough will be crumbly.
  4. Push dough into a even compact layer in a parchment lined 8″x8″ pan.
  5. Bake for about 10 minutes or until just golden brown.
  6. In a saucepan, over medium heat, combine the coconut cream, coconut sugar, and 2 tablespoons maple syrup. Let it come to a boil, then reduce heat and simmer for about 15 minutes, or until the caramel has thickened to a honey consistency.
  7. Pour the caramel on top of the shortbread, then sprinkle with the toasted coconut.
  8. Melt the chocolate chips in a saucepan over medium-low heat and drizzle it on top of the coconut and then let the bars chill for 30 minutes in the fridge, then remove and cut into bars.

  • 1 1/4 cups chocolate chips (Enjoy Life brand)
  • 2 tablespoon coconut oil plus 1 teaspoon for greasing muffin tin
  • 3/4 cup almond butter
  • 1 tablespoon maple syrup

My love for cookies, chocolate chip cookies that is, goes way back. They have always been a long time favorite of mine and I have been testing up so many batches of cookies lately to find the perfect one. One that reminds me of my childhood. It has to be crisp on the outside, soft, moist and crumbly on the inside. It needs to be plump, as I am not a fan of the flat-as-a-pancake cookies. I like them to be fat and plump. And finally, this cookie is studded with dark chocolate chips and then DIPPED in rich dark chocolate.

It’s amazing. It’s pure joy at first bite. Heavenly.

Cricket has been right by my side baking up these cookies with me. She even got to sample the dough before I added the chocolate chips (no chocolate for dogs;)), and she has officially approved these cookies 🙂

The dough is actually good for you as it’s made with almonds, coconut, palm shortening and grass-fed butter. Not that they are low cal, but they are made with whole food ingredients that are dense with nutrients. When you eat these babies they leave you feeling full and satisfied. There is no sugar crash because there is little sugar in these beauties, just some coconut sugar and maple syrup. (You can read about why coconut sugar is a better sweetener option HERE.)

I used to be all about low cal foods, focusing on low fat specifically. I thought that if I ate low fat foods I would not gain fat, but now I know eating fat doesn’t equal a tire around my mid section. The days of low cal/low fat are over. There I said it. They are over. I am proof that you can increase the amount of healthy fats (think avocado, coconut, almonds, some grass-fed butter) in your diet and boost your metabolism. I must tell you it took me so long to jump onto this bandwagon. It really did. I had read other peoples stories about eating high fat and losing weight and I thought: “No way, how can that be?” and “Maybe that works for some, but it won’t for me…” But I was wrong. Eating more healthy fats has lead me to decrease my sugar intake, as my once out of control sugar cravings have now subsided to a healthier level. Healthy fats stoke my metabolism and leave me feeling energized and then I burn more calories throughout the day. I feel great, and that is what is most important above all!

Chocolate Dipped Chocolate Chip Cookies {Video!}

  • 1 1/2 cups almond flour
  • 1 1/2 tablespoons of coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoons sea salt
  • 1 pasture-raised egg (or flax egg)
  • 1 teaspoon vanilla
  • 3 tablespoons coconut sugar
  • 1 tablespoon maple syrup
  • 2 tablespoons grass-fed butter (or sub for 2 T palm shortening, softened)
  • 2 tablespoons palm shortening
  • 1/3 cup of chocolate chips (Enjoy Life brand)
  • additional 1/2 cup chocolate chips for dipping
  1. Preheat oven to 350 degrees F.
  2. Mix all the dry ingredients in a bowl: almond flour, coconut flour, baking soda and salt.
  3. Make a well in the middle of the dry mixture and add the egg, vanilla, coconut sugar, maple syrup, butter and shortening; mix well until the dough is uniform.
  4. Add the 1/3 cup chocolate chips and mix.
  5. Place a heaping tablespoon of dough per cookie spaced about 2″ apart on a cookie sheet.
  6. Bake for 12-15 minutes at 350 degrees F or until just slightly golden.
  7. Remove and let cool (or cool in the fridge for a few minutes).
  8. Melt the 1/2 cup chocolate chips over low heat in a small saucepan.
  9. Pour the melted chocolate into a small bowl and dip each chilled cookie into the chocolate and place onto a parchment-lined cookie sheet.
  10. Place back into the fridge until chocolate is hardened, about 10 minutes.
  11. Enjoy!
