I mean, what is it about chocolate that makes it SO GOOD, and SO ADDICTIVE!? Really!? It really should come with a warning label that reads something like this: “If you are eating this for the first time, be warned, that you may never be the same again and find yourself craving chocolate for the rest of your life.” lol.

Cricket and I love to make healthy treats, so we can indulge in the good stuff, without all the guilt. Although Cricket can’t eat chocolate, because she is a dog, I always make her some thing special when I’m making a treat for myself. So today I made her some bacon jerky while I made these easy chocolate coconut cups all for myself! Oooh- maybe I should have made chocolate covered bacon cups?? Maybe next time….

So many flavors go great with chocolate. The best ones I can think of are peanut butter, almond butter (see my Chocolate Almond Butter Cups), and coconut! I always loved Mounds candy bars when I was a little girl, and now I can recreate that amazing flavor combination without having to leave my kitchen. Even better, the ingredients used to make THESE Coconut Cream Cups are healthy, all-natural, and good for you! Hip-hip Hoorah!

Chocolate Coconut Cream Cups

These creamy, rich, and chocolatey Coconut Cream Cups are the ultimate decandent (and secretly healthy!!) treat. Pop one of these into your mouth and the rich chocolate melts away to reveal silky, smooth, snowy, and sweet coconut cream. They are easy-peasy to make, and be sure to make extra, for they won’t last long!

  • 1 1/4 cups dark chocolate chips (I used Enjoy Life brand
  • 2 tablespoons coconut oil
  • 1/2 cup shredded coconut
  • 1 tablespoon maple syrup
  • 1/4 cup coconut butter
  1. Melt the chocolate chips plus 1 tablespoon of coconut oil in a saucepan over low heat.
  2. Grease the mini muffin tin with a little bit of coconut oil.
  3. Pour a teaspoon of melted chocolate into each compartment. Chill in the fridge or freezer for 10 minutes.
  4. Melt the coconut butter, maple syrup, and 1 tablespoon coconut oil in a saucepan over low heat.
  5. Once melted mix in the shredded coconut, and remove from heat.
  6. Spoon a heaping teaspoon of coconut cream mixture into each compartment (on top of the chilled chocolate layer).
  7. Spoon the remaining chocolate on top of the coconut cream layer and chill in the fridge until set, about 1/2 hour in the fridge or 10-15 minutes in the freezer.
  8. Carefully pop the cups out of the tray using a fork or butter knife.

So this week I set out to make a cookie that called for coconut oil as opposed to butter or palm shortening. I am in love with the health benefits of coconut oil. (Read more about those awesome benefits HERE!!) Did you know coconut oil can help curb your appetite and boost your metabolism? And it provides a nice dose of healthy energy in the form of medium-chain triglycerides.

Chocolate Chip Cookie “Energy” Cups

  • 1 cup almond flour (I recommend Wellbee’s)
  • 2 tablespoons tapioca starch
  • 1 tablespoon coconut sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea or Himalayan salt
  • 3 tablespoons coconut oil (melted)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla
  • 1/4 cup dark chocolate chips (Enjoy Life brand)
  1. Preheat oven to 350 degrees F.
  2. In a bowl combine and mix all the dry ingredients.
  3. Add the wet ingredients and mix to form a dough
  4. Add the chocolate chips and mix.
  5. Scoop about 1 tablespoon of dough into each mini muffin/cupcake tin compartment and press the dough down to compact it. (you also can use a regular muffin tin, but use 2 tablespoons of dough.)
  6. Bake at 350 degrees F for 6-7 minutes.
  7. Remove, let cool, then enjoy. (remove them from the tin by carefully dislodging them with a knife.)

I think about what costume Cricket should wear, that of course has to be compatible with mine. Like Shaggy and Scooby Doo or Bo Peep and her one black (and white) sheep. (The later actually would be a throw back to my younger years circa 6 years old when I was Bo Peep and my younger sisters served as my “flock” of sheep.lol.) Cricket often looks like a baby lamb when she’s sleeping all curled up in a ball. 🙂

The almond butter is creamy, nutty and has a hint of maple. The dark chocolate blankets the gooey middle perfectly and melts in your mouth upon contact.

There is a simple hack to get these cup-shaped chocolates…. a mini cupcake tin. It makes the perfectly sized Maple Almond Butter Cups! They pop right out and then POP them right into your mouth. Swoon!

These Peppermint Crunch Cups are filled with creamy minty coconut, sandwiched between two dark chocolate layers. They are so easy to make (15 minutes and a saucepan is all you need) and happen to be gluten, dairy and refined sugar free, paleo and pegan friendly as well!

These delectable treats are so addictive- you have been officially warned! I made a tray yesterday- 24 mini cupcake sized treats- and they are all gone. Every. Last. One.

So back to those Peppermint Crunch Cups. Seriously you must make these! They are simple, only 6 ingredients, you don’t need the oven, and can be made in under 15 minutes. They would make a great addition to a festive holiday party. Just store them in the freezer if you plan on leaving them out on the table for a bit, as the chocolate can melt a bit in a warm room. If you’d like you can omit the coconut oil from the melted chocolate and just use straight up dark chocolate. They may not be a smooth looking but they will not melt as easily.

Just be sure to make enough!

Peppermint Crunch Cups{Gluten, Dairy & Refined Sugar Free!}

These Peppermint Crunch Cups are filled with creamy minty coconut, sandwiched between two dark chocolate layers. They are so easy to make (15 minutes and a saucepan is all you need) and happen to be gluten, dairy and refined sugar free, paleo and pegan friendly as well!

  • 1 cup dark chocolate chips (I used Enjoy Life brand)
  • 3 + tablespoons coconut oil
  • ½ cup unsweetened shredded coconut
  • ¼ cup [coconut butter|Artisana Coconut Butter 8 ounces
  • 1 tablespoon maple syrup (more or less depending upon sweetness desired)
  • ¼ teaspoon mint extract
  • 4 tablespoons of crushed candy cane (I used [TruJoy Organic/Gluten Free/Vegan Candy Canes|Organic Candy Canes by Trujoy. 2 Packages with 10 each. Vegan. Certified No Nuts Or Gluten. (optional- omit for paleo)
  1. Melt 1 cup of the chocolate chips along with 1 tablespoons of coconut oil in a saucepan over low heat., stir until smooth. Add an additional tablespoon of coconut oil if chocolate is too thick, but careful to not add too much oil as they will melt more quickly at room temperature.
  2. Liberally grease a mini cupcake tin with coconut oil.
  3. Pour a teaspoon of chocolate into the bottom of each muffin tin (this will use about half the melted chocolate), and pop the tin into the freezer so the chocolate sets.
  4. While the chocolate is setting combine the coconut flakes, coconut butter (softened slightly- a few seconds in the microwave), mint extract and maple syrup.
  5. Add the crushed candy cane, if using, and mix well.
  6. Remove the tray from the freezer and add about 1 heaping teaspoon of coconut mint cream mixture on top of each chocolate bottom. Push down with your fingers to compact the coconut.
  7. Next pour a teaspoon of chocolate on top of each coconut layer (using up the remaining chocolate). Dust with excess crushed candy cane.
  8. Place tray in the freezer to 15 minute to allow the cups to set.
  9. To remove the cups from the tray use a knife to carefully dislodge the cups from the tray. They should be fairly easy to remove.
  10. Store in the freezer or refrigerator.
